It's simple! Choose a game, and at the select data screen, you'll see a picture of the controller and the button assignments on it. what emulator are you using? its different depending on the emulator but if it has an option tab or configure tab at the top go to it. Then click configure control plug-in or something close to that and you should be able to change it.
